
From May through July, I eat this about four hundred times. It's my definitive summertime meal. It tastes like laying in the hammock while the breeze blows through the treetops.
The recipe:
*1 can of black beans, rinsed
*1 can garbanzo beans (or chickpeas), rinsed
*1 cup corn
*1/2 c cucumber, diced
*2 vine-ripened tomatoes, diced
*1/4 c cilantro, chopped (or your favorite herb)
*1 large (or 2 small) can white chunk tuna, drained
*2 T olive oil (or more)
*Salt + Pepper to taste (use a lot)
*Whatever else you have that looks fresh or sounds good
Stir it all together and top with some avocado and serve with some crusty bread on the side. Good immediately and great after a day or two. Enjoy!
